Friday Favorite- Crock Pot Chicken Cordon Bleu

One of my family’s favorite meals is Chicken Cordon Bleu.  My husband makes THE best Chicken Cordon Bleu EVER, but he makes it from scratch and it literally takes him hours to make.  He works long hours at his job and doesn’t really feel much like cooking when he’s home.  So as I was wasting time browsing on Pinterest, I came across this recipe and I had to give it a try.  I have made it several times now and it is so easy, quick to throw together, and so delicious.  My family gets so excited when they know this is on the menu.

I love meals where I can throw everything in the Crock Pot (one of my favorite kitchen tools) and not have to worry about it.  The original recipe is from Six Sister’s Stuff, but I have made a few modifications that I have found work better for me.

Ingredients:

6-8 chicken breasts, boneless

1/2 lb. deli ham, sliced thin

1/2 lb. sliced Swiss cheese

1 can Cream of Chicken Soup

@ 1/2-1 c. milk

1 box stuffing mix for chicken

1/4 c. butter, melted

Montreal Chicken seasoning (love this stuff)

I usually buy my ham from the deli, but I was shopping late and settled for the container stuff…either one works fine.

Directions:

1. Spray your crockpot with cooking spray. (It will be easier to clean after.) Cut your chicken breasts in half and place them in the bottom of the Crock Pot. Cutting the chicken breasts in half will make it easier to serve.

2. Sprinkle chicken generously with Montreal Chicken seasoning.

3. Layer the ham and cheese over the chicken.

4. Mix the cream of chicken soup and milk together.  Add just enough milk to make it creamy and spreadable and spread it over the top.

5. Sprinkle the stuffing mix evenly on the top.

6. Pour the melted butter over all.  Don’t worry about it covering everything, just try to distribute it evenly.

7. Cook on low for @ 4-4 1/2 hours.  I have found that if I cook it for too much longer than that or cook it on high the chicken tends to be dry.  I usually start this right after I finish cleaning up the lunch dishes and it is ready for dinner.

My family likes this with broccoli (another family favorite) and broccoli-cheese rice or mashed potatoes.  This recipe makes a lot.  I can feed my family of eight and still have leftovers…not much, but leftovers.
